This presentation explores eco-friendly methods for producing protein extracts and hydrolysates with antioxidant properties from *Microchloropsis gaditana*. Traditional extraction methods use high amounts of solvents and energy, making green alternatives crucial. However, challenges include limited accessibility and the complex, rigid cell wall. Ultrasound-based extraction offers a sustainable solution, reducing extraction time by 5 without toxic solvents. The resulting hydrolysates show promising antioxidant properties, highlighting the potential of this method.
